The brains behind ENLIGHTENED’s recipe development team mixed up a batch of PB&J Ice Cream Muffins to reinvent this classic combo. (Find the how-to video at the end of this post!)
Filled to the brim with delicious strawberry jam and topped with whipped peanut butter frosting, you might just have a new favorite way to enjoy your PB&J.
The secret ingredient: our high-protein Peanut Butter Chocolate Chip Ice Cream makes the batter moist and creamy! With just five ingredients, this ice cream muffins recipe is so easy you’ll be wondering why you haven’t made them this way all along.
1 cup flour
1 tbsp coconut oil
1 pint of ENLIGHTENED Peanut Butter Chocolate Chip Ice Cream, melted
Peanut butter frosting
Peanut butter cookies, for garnish
1. Mix ingredients well and transfer to muffin tin.
2. Bake at 350 degrees 12-15 min.
3. Using core remover, take out middle of muffin and fill with strawberry jam.
4. Spread with peanut butter or peanut butter frosting and garnish with peanut butter cookie! Enjoy!
