Chocolate Dipped Ice Cream Sandwiches

Hi friends! I’m continuing my quest to live a balanced lifestyle with real foods, little sugar, and lots of love. Those who follow me will know that my sweet tooth is out of this world and ice cream is my weakness. Now that it’s football season, I’ve been craving Sunday game day desserts that are easy to prep but still semi-healthy. I’ve found that it can be difficult to find dessert options that don’t sacrifice taste for nutrition, especially for those who are trying to stay away from loads of sugar when showing up to a Sunday football party. This is where Dark Chocolate Dipped Ice Cream Sandwiches come in!
When I think back to my childhood, I remember those incredible mini chocolate ice cream sandwiches that all the kids loved but were probably not the healthiest option. In an effort to recreate a similar experience without the sugar high, I knew I had to find quality ingredients that wouldn’t leave you with a yucky feeling after a full day of snacking. More importantly, I knew my little nuggets of goodness needed to be DELICIOUS, simple, and full of protein. With those criteria in mind, these beauties happened (and with only 4 ingredients)!
The key ingredient, ENLIGHTENED Ice Cream, has been my go-to for years because it hits the spot when I’m craving something sweet but has more grams of protein than sugar in every pint. The best part is that you can get creative and use different ENLIGHTENED flavors and toppings to appease both the kids and adults in the room. Check out the simple steps below and ENJOY! Go team go 🙂
Ingredients
(makes 10 mini ice cream sandwiches)

10 organic graham crackers, broken in half

1 pint of ENLIGHTENED Birthday Cake Ice Cream

1/2 lb. of dark chocolate (preferably 72%+ cacao)

1 tbsp coconut oil

Ssprinkles, coconut flakes, or graham cracker crumbs
Directions

Melt dark chocolate and coconut oil in a heat resistant bowl over boiling water on the stove, stirring constantly to prevent from burning.

Line baking sheet with aluminum foil and place 10 halves of graham crackers on a baking sheet.

Spoon a scoop of ENLIGHTENED Ice Cream onto the graham crackers, then place other half on top to create a sandwich.

Once all graham crackers are made, dip half of the sandwich into the melted dark chocolate mixture and place directly onto baking sheet.

Immediately sprinkle with your favorite toppings and place into the freezer for at least 30 minutes.
