What I Ate Wednesday is a series of spotlights on diverse eating styles and recipes, meant to showcase different diets and explore the wide variety of foods we choose to eat! Ashley is our creative production manager at ENLIGHTENED.
Being a competitive powerlifter, I eat primarily for optimal performance in the gym. While my training changes from day to day, my eating habits remain fairly consistent. I order my meals through a food prep service to decrease the stress around planning my meals and ensure that I’m getting enough protein, veggies, and carbohydrates.
Food prep is essential for me on a daily basis, but especially when I’m training for a competition! I’ve been powerlifting for about a year now and I completely love it. My three keys to success are passion, commitment, and of course, food prep.
Here’s a sample of my usual day of eating, which contains a mix of food prep and delicious snacks!
If I have enough time in the morning before my 5:30 AM workouts, I will usually grab fruit snacks or a granola bar to fuel me through my training.
While chicken and sweet potatoes aren’t the most conventional breakfast food, it’s something that is quick and easy to eat as soon as I get to work.
For lunch I have another yummy meal from the same food prep service! This time I’m having steak, green beans, and potatoes.
In case I get hungry in between lunch and the end of the work day, I’ll snack on some Sweet Cinnamon Roasted Broad Bean Crisps.
To round out my day I’ll usually have some chicken and rice. Then I get to baking cookies!
Baking cookies has become one of my favorite activities to do outside of work. Today I made some cookies & cream overloaded cookies…and I may have had to taste test one myself. 😉
