Vanilla Blueberry Parfait
We’re taking a page out of the Parisian cookbook with our latest concoction. This parfait, which comes from the French word meaning “perfect” (could there be a better omen for a recipe?), will impress guests in both taste and aesthetic presentation. And best of all, it requires minimal effort and only 4 ingredients to make.
You’ll need a tall glass to create the decadent blueberry and vanilla layers. The remaining ingredients can be found around your kitchen, or picked up at your nearest fruit stand (shout-out to NYC’s unsung heros) or grocery store. With warmer months quickly approaching (thank goodness), our Vanilla Blueberry Parfait is the perfect easy-to-make treat to help you cool off.
Although the American version is typically enjoyed in the morning and includes yogurt and granola, we’ve found a happy middle ground between dessert and breakfast. Plus, we’ll take any excuse to eat ice cream for breakfast!
Ingredients

1 pint of ENLIGHTENED vanilla ice cream

1 cup of blueberries (include more or less to your liking)

1 tablespoon coconut oil

1 tablespoon honey
Directions

In a bowl, combine the blueberries, coconut oil, and honey.

Mix well and heat in the microwave for about 30 seconds.

In a tall glass, scoop out a spoonful of vanilla ice cream and layer it on the bottom of the glass.

Place a scoop of the blueberry mixture over the layer of ice cream.

Repeat this process, alternating between vanilla ice cream and the blueberry mixture until your glass is full.

Leave room on top to garnish with whipped cream if you’re feeling fancy!
