Strawberry Cheesecake Ice Cream Cake
We took one of the heaviest desserts out there and “enlightened” it! The crust of our Strawberry Cheesecake Ice Cream Cake is made of just dates, walnuts, and coconut.
Fresh strawberries and Strawberry Cheesecake Ice Cream create a decadently fruity complement to our plant-based crust.
Ingredients

1 cup pitted dates

1 cup raw walnuts

½ cup shredded coconut
Directions

Combine 1 cup of pitted dates, 1 cup raw walnuts, and ½ cup shredded coconut in food processor.

Pulse until blended and press into a springform pan.

Blend 2 pints of softened ENLIGHTENED Strawberry Cheesecake Ice Cream with ½ cup strawberries.

Pour over crust.

Top with sliced fresh strawberries and coconut flakes and place in freezer for a minimum of two hours.

Slice and serve!
