Rainbow Layer Cake
It’s what’s on the inside that counts…and this is especially true when it comes to our Rainbow Layer Cake. This cake gets its festive name from the colorful surprise waiting inside and it’s even easier to make than you would’ve guessed.
Although our Rainbow Layer Cake recipe only has a few steps, preparing six cake layers will require some patience. Be sure to consider the number of cake pans available as well as oven space before beginning!
If you’re short on cake pans or oven space, you can always bake a few layers at a time rather than all of them at once, but be sure to let each layer cool before removing it from the pan. Once the steps for the first layer have been mastered, just repeat for each additional layer you decide to add to your cake and get stacking.
Ingredients
(Frosting)

12 ounces cream cheese, softened

1 stick unsalted butter, softened

1/2 cup Sukrin Icing Sugar (zero-calorie and erythritol-based!)

2 teaspoons vanilla extract

Stevia Glycerite or Stevia drops to taste

Optional: 1/2 cup sprinkles

1 cup self-rising flour (for each layer)

1 pint of Enlightened Vanilla ice cream (for each layer), softened in the refrigerator for 30 minutes

In a medium bowl, beat cream cheese with a hand mixer until smooth.

Add sweeteners to the bowl and beat in until the texture becomes airy. Then add the vanilla extract and ensure all ingredients are fully mixed before proceeding.

Add butter, beating in again until the mixture feels whipped and light.

Quick tip: Adjust the sweetness to your preference by adding more sweetener or Stevia if so desired!

Optional: Add sprinkles.

Refrigerate while preparing cake layers.

Once it’s frosting time, be sure to quickly beat until light and fluffy before applying to the cake.

Combine self-rising flour, a softened Enlightened Vanilla ice cream pint, and food coloring in a mixing bowl. Repeat these steps for each layer.

Place each of the six colors in a separate cake pan. (If you have fewer than six cake pans available, you can also bake the layers in intervals.)

Bake each layer for 18-20 minutes at 350 degrees.

Once the cake layers have properly cooled, cut the top of each layer off.

Frost the top of each layer and carefully stack them one on top of the other. (Psst…don’t forget to consider color placement!)

Once the layers have been stacked, frost the top and sides of the multilayered cake.

Refrigerate for 1-2 hours before cutting and serving.
