When you think “fried foods” your mind probably conjures images of fair vendors peddling treats like funnel cake, corn dogs, and fried Oreos. The child within us all may find delight in reminiscing about these doughy goods, but the wise adult of the present knows better. Fried foods tend to run high in fat, calories, and sodium–all while raising your cholesterol (they’re nothing if not multitaskers, those pesky fried foods).
Luckily, we discovered a compromise! Our food stylist put together a No-Fry Fried Ice Cream recipe that doesn’t skimp on taste and is higher in protein and lower in fat than the fried ice cream you know. This next level dessert satisfies sweet and savory cravings all in one delicious bite. The flaky outer layer complements the sweet creamy inside just perfectly. Pro tip: make extra because it’s impossible to stop at just one.
And what’s even better than that? With only three core ingredients, you can finish this recipe in under an hour!
2 cups of your favorite cereal (we chose corn flakes)
2 teaspoons ground cinnamon
ENLIGHTENED ice cream flavor of your choice (we went with Bananas Foster)
Ice cream scooper
Caramel & fruit toppings
Crush 2 cups of your favorite cereal in a bowl.
Add 2 teaspoons of ground cinnamon to the bowl and mix well.
Use an ice cream scooper (or a regular ‘ol spoon) to scoop out 3” ice cream balls. Arrange the balls on a freezer-safe plate or pan.
Refreeze the scoops for 30 minutes.
Coat the scoops using the crushed cereal/cinnamon mixture.
- Don’t forget to add fruit and drizzle caramel sauce over your creation before enjoying!
