Dessert Tacos
Summer is just around the corner, and we can hear the ice cream truck song playing already. Luckily, you don’t have to wait to enjoy any dessert favorites, since we created a delicious and fun recipe to try at home! Bring on the Dessert Tacos.
Golden, hot waffles mixed with creamy, cool scoops of ice cream somehow taste even more delicious when folded up and enjoyed in dessert taco form. Plus, you can’t beat the smell of freshly baked waffles wafting through the air. Our dessert tacos take less than 20 minutes to make—and the best part is you can use different flavors and toppings for each taco you create. The possibilities are endless!
After spending some time in the kitchen making our dessert tacos (ok…and eating one or two 😉) we learned a few tips. Folding your waffle into a shell shape is basically an art form, and you get to be Picasso! Be sure to fold the waffle while warm and carefully hold it in place so it can take shape as it cools. Wait until the waffle fully hardens into a taco shell shape before adding ice cream slices. It’s tempting to enjoy them on the spot, but for ultimate tastiness, let them freeze for about 2-3 hours. Once they’re out, the rest is up to you, but we highly recommend getting creative with toppings like melted chocolate, coconut shavings, and sprinkles!
Ingredients

1 pint Enlightened Chocolate (or any flavor of your choosing!)

¾ cup flour

Powdered sugar

¾ cup (to mix with dry ingredients)

2 tbsp (to mix with wet ingredients)

½ tsp salt

¼ tsp cinnamon
-
3 large egg whites
-
Optional toppings: chocolate chips, coconut shavings, sprinkles
Special equipment

Flat waffle iron
Directions

In a medium bowl, mix flour, ¾ cup powdered sugar, salt, and cinnamon.

In a separate bowl, combine 3 egg whites and 2 tbsp powdered sugar. Using an electric mixer on medium-high speed, beat ingredients until stiff, fluffy peaks form.

Fold dry ingredients into the egg white mixture until just blended.

Spray waffle iron with non-stick cooking spray and place on a medium heat setting. Pour 1/4 cup batter into waffle iron and close lid to flatten. This will make one taco shell at a time. Carefully remove with a spatula once golden.

While still warm, bend your waffle to achieve a taco shell shape. A rolling pin works perfectly, but any object that’s round and has a 1-inch diameter will do!

Cut pint into 4 slices (instructions here) and slide the slices into the cone shells once they’ve fully hardened into shape.

Let freeze for 2-3 hours.

Optional: dip dessert tacos into any melted chocolate dips, toppings, or sprinkles you desire. Let chocolate set and enjoy!
