Dessert Nachos
Forget the nachos you know and make way for this cinnamony sweet creation featuring ENLIGHTENED French Toast ice cream! We chose to make Dessert Nachos to celebrate Cinco de Mayo not only as an excuse to eat more ice cream but, as our Creative Director pointed out, tortillas are the base of Mexican cuisine and the perfect (if unexpected) complement to a scoop of ice cream!
These Dessert Nachos have a base of cinnamon sugar baked tortilla chips. Crispy, crunchy, and deliciously sweet, after tasting these we couldn’t help but wonder why we’d never tried tortilla chips like this before.
We topped these bites of cinnamon sugary deliciousness with a scoop of French Toast ice cream. The cinnamon sweetness of the ice cream paired perfectly with the baked tortilla chips, and we couldn’t resist some cinnamon on cinnamon action for our Dessert Nachos!

Ingredients

1 pint ENLIGHTENED French Toast ice cream

4 small flour tortillas (6 inch)

3 tablespoons unsalted butter, melted

3/4 cup granulated sugar

1 tablespoon ground cinnamon
Directions

Preheat oven to 400F degrees.

Line two large baking sheets with parchment paper. Set aside.

Cut the tortillas into 8 even triangles. Place in a large mixing bowl.

Pour melted butter over top and toss until each triangle is fairly coated.

Mix the sugar and cinnamon in a small bowl. Add the mixture to the bowl and toss the triangles to coat.

Line the triangles onto baking sheets in an even layer.

Bake for 20 minutes in batches for 5 minutes, flipping each time. Feel free to sprinkle a little more cinnamon-sugar on top of the finished chips if desired.

Top with scoop of ice cream and drizzle of chocolate sauce.
