Cold Brew Cheesecake Pie
Calling all coffee addicts lovers! If your day doesn’t start until you’ve had a cup of joe, this is the perfect recipe for you.
Over here at ENLIGHTENED HQ, we’re big fans of caffeine…we just prefer our coffee in ice cream form. What is more decadent than coffee and ice cream? Coffee and ice cream and cheesecake. Gather together the seven ingredients listed below and create a delicious, share-able Cold Brew Cheesecake Pie made with coffee from our friends at La Colombe!
Cream cheese and Cold Brew Coffee ice cream make up the creamy center of this pie, plus we kept it simple and picked up a pre-made graham cracker crust. The combo is pretty much like an espresso and biscotti.
Chocolate drizzle is the ultimate anyone-can-do-it garnish, so finish your pie with a rich chocolate decoration.
This pie was definitely a team effort. We thought La Colombe Draft Lattes were perfection on their own, but it turns out they make an even more decadent Cold Brew Cheesecake Pie!
Ingredients
-1 pre-packaged graham cracker crust
–1 (8-ounce) package of cream cheese, softened
-2/3 cup powdered sugar
-1/2 teaspoon vanilla extract
-1/2 La Colombe Draft Latte, flavor of your choosing
-1 pint ENLIGHTENED Cold Brew Coffee ice cream, softened
-1/2 cup chocolate chips, melted (optional)
Directions
Before getting started, make sure to remove your ENLIGHTENED Cold Brew Coffee pint from the freezer to temper for about 20 minutes.

Combine sugar, La Colombe Draft Latte, cream cheese, and vanilla in a bowl.

Using an electric mixer, blend together until creamy.

Add the softened ENLIGHTENED Cold Brew Coffee pint to the mixture and beat until smooth.

Pour mixture into graham cracker crust.

Put the pie into the freezer for 4-5 hours or until completely frozen.

Drizzle with melted chocolate and serve immediately.
