Cinnamon Bun French Toast

Bet you never considered a griddled Cinnamon Bun French Toast soaked in ice cream (not eggs)! But surprise — it’s probably the most delicious breakfast you’ll eat this week!
Sure, your local diner serves up a nice french toast, but nothing beats fresh, warm, Cinnamon Bun French Toast topped with three scoops of Ooey Gooey Cinnamon Bun ice cream. Plus, when you cook at home, you can swap in whichever bread you prefer to make a low carb or keto French toast. (For this recipe, we use traditional thick-cut bread.)
To keep your French toast warm and crisp while preparing each piece of bread, we recommend placing your finished toast on a wire rack in a warm oven. If you’re not into the cool-ice-cream-on-warm-French-toast thing (you’re more a pint at night kind of person, we get it), melty peanut butter, jam, and fresh fruit also make delicious toppings.

Ingredients

1 pint Enlightened Ooey Gooey Cinnamon Bun, melted

4 slices thick bread

4 tablespoons plant-based butter, divided
Directions

Preheat oven to 250°F. Pour melted ice cream into bowl.

Add bread to melted ice cream, turn to coat, then let sit 3 minutes. Flip bread and continue to soak until saturated but not soggy, about 3 minutes more.

Heat 2 tbsp butter in a large skillet over medium heat. Using tongs, carefully lift 2 bread slices from ice cream, letting excess drip back into dish. Transfer to skillet in a single layer and cook until golden brown. Transfer to a wire rack set inside a rimmed baking sheet; keep warm in oven until ready to serve. Repeat with 2 tbsp butter and remaining bread.
