Butter Pecan Ice Cream Muffins
These nutty and sweet muffins are easy to whip up and store for afternoon snacks or grab-and-go breakfasts.

Ingredients:

1 pint ENLIGHTENED Butter Pecan ice cream

1 cup self-rising flour

1 tbsp coconut oil

1 cup white chocolate chips

1/4 cup ENLIGHTENED Sweet Cinnamon crisps, crushed

Pecans (for garnish)
Recipe:

Mix melted ice cream, flour, and coconut oil thoroughly.

Spray muffin tin with nonstick cooking spray and fill with batter.

Bake for 12-15 minutes at 350 degrees (until golden brown). Let cupcakes cool.

Melt white chocolate chips and dip the top of each cupcake in white chocolate

Sprinkle with crisps, top with pecans, and enjoy!
